Canning Time again

Wow what a past couple weekends Ive had canning. Everything happens at once. Asparagus are done.Pickled cucumbers done,Bread and butter pickles are done.Strawberry,raspberry, blackberry and mango jams are done.Im waiting on okra,Huckleberries peach and nectarines left to go. Lets not forget Apricot (Moms favorite)Ive been doing both with sugarless full sugar and no sugar. My pantry is filled up .

I finally found Okrie (okra). Sunday I put up 15 pints and 3 quarts of pickled okra. Back to jams next for nectarine jam.

Hey Rac, do you know a good place to get pickling cucumbers on the cheap? I used to get them at this place down south, but lately they're more expensive than I'd like to pay for 'em. The little guys, not the giant ones, I make my grandmas sweet pickle recipe, I'm the only one left alive that remembers it.

Unfortunately they are a $1.49 a pound at Carpinitos in Kent.I saw some U-Pick in the Yakama area for less but the drive is bad. What you pay for gas makes the $1.49 look good. Carpinitos is in Kent on Central Ave. (84th south)

An all around good one is 3 parts water to 3 parts vinager and 1/3 cup canning salt.

Both companys Kerr and Ball have a paperback book with total instructions on canning. I have both . They are the canners bible. I strongly suggest getting one. They are sold anywhere where canning supplies are sold.Its really a very good guide to follow and after experimenting ,you'll find lil things you can add or omit. Good Luck. This weekend I made full sugar and no sugar nectarine jam. 12 pints ,3 half pints.
