I was just thinking, back when I was a kid in Michigan there was a commercial fishing outfit where you could get fresh/smoked fish and fish sausage. Anyone around here ever hear of such a thing as fish sausage and if so do you know where a guy could get some? It was pretty good on occassion and now that I'm thinking of it I really want some.

Fish sausage? I grew up in Michigan and the only place that I ever saw the stuff was in the UP. My parents had a cottage on Lake Gogebic in the west end and I can remember seeing signs for smoked fish (usually whitefish or chubs) all along the upper peninsula. I never really cared for the stuff. I've tried to make sausage a couple of times from salmon or cod but never really liked it.

Wolverine, I also grew up in the UP. A lot of the places that had the smoked fish also had the sausage. It was made out of whitefish if I recall, seemed like it was better than salmon as making sausage out of salmon would be a waste

I make a fish sausage using Halibut,sole,ling/true cod, black cod and a lil salmon.I grind it all fine and form balls . I put egg and a coarse bread crumb meal and eggs w/ seasoning. Boil in water with onions celery and carrots. I drain off the milky water and put into a bowl of fish stock.(easy to make ).Serve it with horseradish and your good to go.
