I enjoy a good sauce every so often but I'm really into dry rubs with mopping on the meat I BBQ or smoke.Heres a very good standard rub I use for Beef/Pork.
3/4 cup paprika
1/4 cup sugar(I prefer Torbanado or brown sugar)*
1/4 cup salt
1/4 cup black pepper
1/4 cup of each granulated garlic and onion
2 tblspoons hot cayenne (ground)
2 tblspoons chili powder ( I prefer a lil more.)
Combine all ingredients ,prep your meat,(hehe) rub the mixture on the meat well and let it sit in a plastic bag for at least a couple hours, then smoke it(in a smoker) after smoking to desired smokieness cook on higher heat around 300 degrees.I use a Traeger for the whole cooking process.

The mop I use is about a 1/4 cup of the rub in a 12 oz beer in a saucepan.cook or warm enough to stop the beer from heading. Every so often mop your meat with this.Instead of beer try applejuice or a lil apple cider vinager for extra tang. While Im smoking it I usually have a couple metal containers with liquid in them to keep the meat moist.

I like rubs because sauce for me is too sweet and messes up with my blood sugars
*= Im diabetic so natural sugars decipate quicker from my blood and dosent linger as long as corn syrups .

Just make sure you wash your hands first, or you'll get BBQ all over your keyboard :chef:

I was down in New Orleans a few weeks ago and I picked up this seasoning called "Slap yo Mama" seasoning. It is extremely spicy, but is a good dry rub and when you bbq with it, it takes out a lot of the bite. It is so delicious on chicken and ribs. I don't even mess with sauce anymore with this stuff and I love it.

I feel really bad about this.I made a typo on this recipe. Can anyone guess what ingredient it was.

2 tablespoons of hot cayenne is more then most rear ends can handle in any one meal. Its supposed to be 2 teaspoons of hot cayenne.I even tried hooking up my broken computer to log on at home. All I could think of was Rich and Family with their inners a-glow.

I asked a friend of mine from Texas once "what kind of sauce do you use?" He glared at me with devil eyes.He said "No Texan would use some sweet sickening sauce on a smoked BBQ."

Ralph, thats to funny. Especially considering what happened with the mix up in that one batch. I was to busy getting sun burnt out on Tapps to do much cooking this weekend. I havnt heard from Tommy though, maybe he tried the ultra hot rub..

Tommy? you still there? Tommy???

I changed up my meal plans for the weekend.I was gonna do Spareribs but instead smoked a boneless leg of Wa. grown lamb using Grapewood pellets in the Traeger. Boy did that come out good.Just as an FYI QFC has Leg O' Lamb on sale for $3.(( a pound ,and boneless Leg O' Lamb for $4.99 a pound. Superior Wa grown lamb. Its a pretty good deal.

Here is a real easy one I use very often and all that dare say more!:chef: :bounce:

Now were just talking salt waters caught = Salmon, Kings, Coho and River steelhead one day or hours out of the water heading for the BBQ and soon.:fish:

Place your cooking area with fresh grounded garlic and then some Garlic Salt then some fresh Whole Ground Pepercorns grounded and a dash of Johnnys seasoning over the cooking area.

Then lay down a nice amount of Teriyaki Marinade Sauce I like Kikkomans:chef:

Lay down your fillets or cut steaks 2 inchers max on this process.

Leave the skin on and cooking skins side down.

Then hand Cut Fresh Walla Walla Sweet onions and lay over all and another dose of fresh ground Garlic and Teriyaki marinade and dust the top off with Brown Sugar and real butter and cover all and let sit in the Refer 4-6 hours .

You follow this Swedebonics:-# :-$ keep it simple outside Fish BBQ not even fish haters will say no trust me I cook, smoke and Q= 100,s of lbs of fresh fish

Cats, rats, even bats will come we use the outside Fire pit as well on each and all we share on these BBQ's with friends and family

As this application is soaking above prepair your live Fresh caught Crabs:colors: :clown: , shrimp and more for the outside Propane stainless soaker and cooker as well . I hand handle all mine to give them at least a fighters chance before the butter and garlic soakers coming.
I like Pain:cyclopsan :eye:

Don't over cook it and control your heat:chef:
The key to the above is it is a bit of a conflict with Garlic, salt, seasonings then Brown=sugars as well as Teriyaki soak :-$

Try it simple, easy and yummers=p~

We just made a oversized Cedar smoke house at Lindens Cave we need to age and season it soon!:cyclopsan :chef:

Are you sure it was a clam? Now the question is how do you floss a clam?
