well i finally got a smoker so i am doin some jerky and the next a bunch of fish
If it looks fishy, Then fish it, If it dont look fishy, fish it anyways. <')}}}}><

Wheres our sampler packages Curado? We may not believe your judgement only. I will volunteer my pallet to help you out.

smoked lol. it is a simple cure 1 quart water 1/2 cup sugar and 1/2 cup salt. add worchestshire and then a bottle of beer to cut the salt. due to the salty factor of the shire

Good job there. I use beer in my Carne Asada for pretty much the same reason.Plus it gives the food a slight malt / barley/hops flavor.A good beer also works when eating it for other reasons. Hehehe

The smoked Cohos I did came out awesome Curado. Im doing a batch of steel right now. My wife said we can meet up and make a trade maybe do some fishing too. So get ahold of me later in month on fb and we will work it out.

Another way to cut the salt taste is using some white wine. Does the same that beer does. I was looking through my recipes and saw I was using the wine. And I dont mean Ripple or Thunderbird.LOL.
